Microwave Lemon Cake

Butter a microwavable basin. Pour in four tablespoons of lemon curd.

Beat together 100 grams soft butter, 100 grams caster sugar, 100 grams self raising flour, 1 tablespoon milk, two large eggs and the zest of one lemon.

Spoon over the curd. Microwave uncovered for three and a half to four minutes, until risen and cooked through.

Leave to stand for one minute.

Loosen edges with spatula and turn out onto a plate.
